1. Blend together the coconut milk, banana, maple syrup, and vanilla extract until smooth. Add the mixture to a glass container. Then add in chia seeds and mix gently. Place in the refrigerator for at least two hours. 2. Before serving, mix together pineapple and brown sugar in a small bowl. This gives the brown sugar and pineapple a syrupy type texture. You can also use coconut sugar here if you prefer. 3. Top the chia seed pudding with the pineapple and coconut flakes, and enjoy!
