Peel and cube some eggplant. Season up bread crumbs. Dredge the eggplant cubes in one beaten egg, and then in the seasoned breadcrumbs. Throw them on a parchment sheet lined sheet pan. Drizzle with olive oil, then throw them in the oven at 400 degrees Fahrenheit for about 18 minutes.
