Smoked Salmon Crostini

Many of you spotted the smoked salmon crostini in my Easter brunch video. My family ended up loving this little bite! It is a super easy appetizer or would even translate into lunch. I used store bought crostini but you could also slice up a baguette and stick the slice in the oven for a bit. Put this on your list for your Mother’s Day brunch or your next slow Sunday morning!

Place the avocados in a medium size bowl and mash until they are a chunky consistency. Add in the lemon juice, chili oil, onion powder, salt, and pepper. Mix gently until well combined. Spoon about a tablespoon of the avocado mixture onto a piece of crostini. Slice a piece of smoked salmon into a piece that is about 1/2 inch thick. Use your judgement according to what will fit on the crostini. Repeat with the rest of the ingredients. Prior to serving you may want to drizzle with more chili oil, or a regular olive oil. Then top with microgreens if desired. Chopped chives would also be a great garnish!
