A quick and easy recipe for crispy zucchini rounds, perfect for using up late summer produce. Zucchini is seasoned, coated in breadcrumbs and Parmesan, then baked until golden.

Preheat the oven to 425 degrees. Line a baking sheet with parchment paper. Add the zucchini rounds (cut into 1/4 inch thick rounds) to a bowl and sprinkle kosher salt over top. Let it sit for about 10 minutes to draw out excess water. Then pat the zucchini rounds dry. Add the zucchini to another bowl, drizzle olive oil over top, and mix until well coated. Sprinkle the breadcrumbs over top, toss again to coat well on all sides. Add the zucchini rounds to the prepared baking tray. Then sprinkle Parmesan cheese over top as evenly as possible. Place into the oven for about 25 minutes, until the tops are brown and crispy. Sprinkle with more kosher salt if desired!
