First, prepare the dressing: In a small bowl, whisk together the 1/2 cup olive oil, 3 tbsp red wine vinegar, 2 tsp Dijon mustard, 1 minced garlic clove, 1 tsp chopped fresh oregano (or 1/4 tsp dried), 1/2 tsp sugar, 1 tsp kosher salt, and 1/8 tsp pepper until well combined. For the salad assembly, especially if using a mason jar, start by layering the chickpeas on the bottom. Follow with chopped cucumber and halved cherry tomatoes. You can add red onion if desired. Drizzle the prepared dressing over these layers and top with feta cheese.
