For the dressing, whisk together 1/4 cup olive oil, 2 tbsp red wine vinegar, 2 tsp dijon mustard, 1 tsp honey, and salt and pepper to taste. In a bowl, add chickpeas, chopped olives, and spinach. Toss it all in the dressing. Add a bit of premade tzatziki on top. Add some pita to the mix.
