In an effort to change up the side dish rotation, this little mash up became a weekly staple. Roasted Broccoli with a Caesar inspired dressing. We like our broccoli super toasty, almost a bit burned if you will. It gets crispy and crunchy, a little salt and honey for Siena. She loves it! Yes, my kid eats broccoli this way! My quick version of Caesar dressing below.

Preheat oven to 425°F. Cut broccoli into florets and slice them as best you can. Lay the broccoli on a baking sheet, drizzle with olive oil, kosher salt, and pepper. Roast in the oven at 425°F for about 15 minutes, or until your desired level of 'done' (super toasty, almost burned for crispy and crunchy texture). For the dressing, combine 1/4 cup mayo, 2 tsp Dijon mustard, 1 tsp anchovy paste, 2 tbsp olive oil, the juice from half a lemon, and 4 tbsp Parmesan cheese in a bowl. Season with salt and pepper to taste and whisk together until combined. Pour the dressing over the roasted broccoli. Top with lemon zest and more Parmesan cheese if desired. For a kid-friendly version, add a little salt and honey to the roasted broccoli.
