Preheat the oven to 450 degrees, line a baking sheet with sides with parchment paper. In a small bowl whisk together the avocado oil, maple syrup, dijon mustard, pepper and salt. Set aside. Sprinkle some flour on a clean work surface. Roll out the dough until it is about a 14 inch by 11 inch rectangle. Brush the surface of the dough with the maple syrup mixture (you won’t use all of it). Layer the cheddar cheese starting about 1/2 inch from one edge (I usually start from the left) then layer the apple slices over top, overlapping them. Sprinkle the crumbled sausage over top, evenly. Brush a little bit more of the maple syrup mixture over top. Lift up one long end and start rolling. Continue rolling until the seam on the log is on the bottom. Pinch the ends so they don't open and tuck the dough under the roll. Cut 3 slits into the top of the dough. Brush remaining maple syrup mixture over top and sprinkle coarse salt over top. Place in the oven for 20 minutes. Let rest for 5-8 minutes before cutting it.
