Whisk together the olive oil, rice vinegar, soy sauce, turmeric, finely chopped garlic, chopped scallions (white and green parts), poke seasoning, Gochugaru (Korean-style chili powder), kosher salt, and pepper in a bowl until well combined. Brush this marinade generously onto salmon fillets. Preheat your oven to 375 degrees Fahrenheit. Place the marinated salmon in the oven and bake for 20 minutes. Serve the salmon over sushi rice, seasoned with soy sauce and furikake seasoning, and with suggested accompaniments like quick pickled cucumbers and/or radishes, avocado, carrot slices, and Kimchi Mayo.
