Sweet, Spicy, and Savory Cherry Tomato Jam

One way to keep your summer cherry tomatoes a little longer, turn them into this sweet, spicy and savory jam. Then make sure to use it to top a thick slice of Italian bread, a crispy chicken cutlet, or with pasta.

Add the tomatoes, vinegar, honey, chilli flakes, pepper and salt to a saucepot. Stir to combine and bring to a boil. As the tomatoes heat up they will blister, press down gently with a spatula to help them burst along the way. Reduce the heat to a simmer and allow to cook for about 30 minutes until the ingredients have thickened and turned into a jammy texture. Remove from heat. Allow to cool and then transfer to a small jam jar or glass container with a lid. Seal and store in the fridge and enjoy as you wish for up to two weeks.
