1. Preheat oven and cook frozen fries according to package directions, spreading them in a single layer on a baking sheet (optionally lined with parchment paper for easy cleanup) until golden brown. 2. While fries are cooking, prepare the gravy: Melt butter in a saucepan over medium heat. Sauté chopped shallots and garlic for about 4 minutes. Sprinkle in flour, whisking to combine, and cook for about 1 minute. 3. Gradually whisk in beef stock until the mixture is smooth. Bring to a simmer, then add Worcestershire sauce and thyme sprig. Let simmer for 5-7 minutes, or until thickened. Whisk in 1 tsp salt and 1 tsp pepper, then remove from heat. 4. Once fries are golden brown, remove them from the oven and sprinkle 1 cup shredded mozzarella cheese over top. Return to the oven for about 3 minutes, until the cheese is melted. 5. Transfer the cheesy fries to a plate or serving dish using a spatula. Spoon the hot gravy generously over the fries, add another layer of cheese if desired, and enjoy immediately.
