Sweet Potato and Goat Cheese Galette with Herby Olive Oil

I always say I am not the best baker. Galettes never fail me! They are so forgiving with their rustic aesthetic. Thin rounds of sweet potatoes with smoked paprika, layered with caramelized shallots and goat cheese. With an herby olive oil added over top. Sounds super fancy, but it is rather quick and easy. This also travels well and heats up the next day!

1. Preheat oven to 400 degrees. 2. Add the sweet potato rounds to a medium size bowl. Add the olive oil, smoked paprika, salt, and pepper. Toss gently to coat. 3. Melt the butter in a saute pan over medium heat, add the shallots, and saute until they begin to brown, about 15 minutes. Sprinkle brown sugar over the pan, stir gently, saute 5 minutes more and remove from heat. 4. Line a baking sheet with parchment paper. 5. Place the pie crust round on the parchment paper. 6. Add the sweet potato rounds starting in the center of the parchment paper. Overlapping each round. Add a layer of shallots, then goat cheese. Repeat another layer of sweet potatoes. Making sure to leave a 2 inch border. 7. Gently fold over the edges of the the pie crust over the top of the sweet potatoes. 8. In a small bowl mix together the olive oil, honey, parsley and chives until well combined. 9. Spoon this mixture over the top of the galette. 10. Place in the oven for about 30-35 minutes until the crust becomes browned.
