Place the challah or brioche bread in a baking dish lined with parchment paper. Cut the top of the bread crosswise, but not all the way through. In a separate bowl, whisk together the eggs, 1/3 cup milk, 1/4 cup maple syrup, 1/2 cup brown sugar, 1 tsp vanilla extract, and 1/2 tbsp cinnamon. Pour this mixture over the top of the cut bread. For the filling, whip together cream cheese, 2 tsp vanilla extract, and confectioners sugar until smooth. Fill the crevices of the bread with this cream cheese mixture. For the topping, mash together 3/4 cup flour, 1/2 cup brown sugar, and 1 stick (4 ounces) softened butter with a fork until you get a crumbly texture. Top the stuffed bread with this crumbly topping. Bake for 45-50 minutes at 350°F.
