First, blend together the 1 1/2 cup packed spinach, 2 tablespoons olive tapenade, 1/2 cup olive oil, and 2 teaspoons breadcrumbs to create the spinach mixture. After topping your salmon filets with hummus and this spinach mixture, add two slices of lemon on top of each filet. Bake the salmon in the oven at 375 degrees Fahrenheit for about 15 minutes.
