Preheat the oven to 425 degrees. Prepare a baking sheet with parchment paper. Place the breadcrumbs in a shallow bowl and the eggs in another shallow bowl. Dredge each piece of eggplant in the eggs, letting the excess drip off. Then dredge in the breadcrumbs on all sides, pressing the eggplant into the breadcrumbs to help adhere. Place onto baking sheet. Drizzle with olive oil and given them a gentle toss. Sprinkle salt over top. Place pan in oven for 25-30 minutes, until the eggplant turns a deep golden brown.
