Remember when everyone was into avocado toast? I wonder if we can get #meatballtoast to hit the same way haha! I had some #sundaydinner leftovers and put them to good use. I made some Italian bread into garlic bread, grating the garlic onto the toast for extra points. I spread a layer of ricotta cheese on the toast. I made a pesto out of some leftover parsley and basil from my meatballs. Layered that on. Then took my reheated meatballs and gave them a light smash. Served it up with a sprinkle of Parmesan cheese & some salad. You might say round two is better than one ! 1. Make Italian bread into garlic bread by grating garlic directly onto the toast. 2. Spread a layer of ricotta cheese on the garlic toast. 3. Create a pesto sauce using leftover parsley and basil (from your meatballs). 4. Layer the homemade pesto onto the ricotta-covered toast. 5. Reheat the leftover meatballs and give them a light smash. 6. Place the smashed meatballs on top of the pesto layer. 7. Serve with a sprinkle of Parmesan cheese and a side of salad.
