Life gets busy, and sometimes a semi-homemade meal is a lifesaver! This dinner combines convenient Trader Joe's Balsamic Beef Tips with homemade creamy polenta and quick sauteed spinach for a delicious and easy weeknight meal.

1. Cook the Trader Joe's Balsamic Beef Tips according to package directions, either on a grill pan or in a cast iron skillet until heated through and nicely browned. 2. For the Polenta/Grits: Combine 1 cup of milk and 1 cup of water for every cup of polenta or grits you plan to cook. Cook according to the package directions until creamy and thickened. At the very end, stir in two tablespoons of butter until melted, then turn off the heat and add in Parmesan or goat cheese to taste. 3. For the Sauteed Spinach: Heat olive oil in a saute pan over medium heat. Add the spinach and let it wilt down for about 3 minutes. Add two minced cloves of garlic to the pan and continue to cook for another minute until fragrant. Season with salt and pepper to taste. 4. To serve, spoon the creamy polenta onto plates, top with the cooked balsamic beef tips, and serve alongside the sauteed spinach.
