Twice Baked Potatoes are something I have been making since Brian and I first got married. They are one of his favorite side dishes, I mean who doesn’t love a loaded potato?

Microwave the potatoes until they are easily pierced by a fork. Allow the potatoes to cool to touch. Slice the top third lengthwise off the potato. Use a spoon to gently scoop out the insides, leaving about 1/4 inch of potato on the skin. Almost like a larger potato skin. Place the scooped out potato insides, sour cream, heavy cream, garlic powder, paprik, salt and pepper into a large bowl.Mash with a potato masher until you have your desired consistency. Try not to overwork them because they will turn the consistency of glue! Place the potatoes in a ceramic baking dish, rub the skins with olive oil. Stuff the potato shells with the filling. Top with the shredded cheese. Bake in the oven at 375 for about 15-20 minutes, until the cheese is melted. Top with fresh chives and serve.
