Watermelon Strawberry Rosé Sangria

First, make the simple syrup: combine 1 cup water and 1 cup sugar in a small saucepan. Heat until the sugar is completely dissolved, then let it cool. Pour the rose wine into a large pitcher. Add about 3 cups of cubed watermelon to a blender and blend until smooth. Set a fine mesh sieve over a large bowl or liquid measuring cup. Pour the watermelon purée through the strainer to extract the juice. Add 2 cups of the strained watermelon juice to the pitcher. Repeat the same process with about 2 cups of strawberries: blend until smooth, strain the juice, and add 1 cup of the strained strawberry juice to the pitcher. Next, add the cooled simple syrup (1/4 cup) and the juice of 2 limes to the pitcher, followed by the club soda. Stir gently to combine all ingredients. Add some ice cubes directly to the pitcher or place the pitcher in the fridge until ready to serve.
