Blood Orange Farro Salad with Sweet Chili Dressing

Farro is one of my favorite grains. This Blood Orange Farro Salad is tossed in a Sweet Chili Dressing and can brighten up any winter meal, leaning heavy on citrus as a go-to fruit during winter months. This makes a great dish for any holiday table as it is vibrant, flavorful, and colorful!

What you need

tbsp fresh chives

tsp black pepper

blood orange

tbsp chili paste

tsp kosher salt

cup goat cheese

tbsp honey

cup farro
Instructions
Cook farro according to package directions, drain and set aside in a large bowl. In a small bowl whisk together the ingredients for the dressing (olive oil, honey, roasted red chili paste, chives, kosher salt, black pepper). Add the oranges to the farro and gently mix through. Then pour over the dressing and goat cheese, toss gently and let rest for 15 minutes or so. Then serve.View original recipe
