pickling cucumbers

cup sugar

cup kosher salt

cup water

cup white vinegar

tsp paprika

clove garlic clove

baby-cut carrots

tbsp mustard powder

cup apple cider vinegar
cup sweet onion
Instructions
In a medium size saucepan bring the water, apple cider vinegar, and white vinegar to a boil. Add in the onion, garlic, sugar, and salt. Boil until sugar is dissolved. Then add in the dried mustard and paprika, stir gently. Let the mixture boil another minute, then remove it from the heat. Add the cucumbers (cut into spheres), carrots (peeled and cut into sticks), and red bell peppers (sliced) to a wide mouth jar. Carefully ladle hot mixture into wide-mouth 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles and, if necessary, adjust headspace by adding hot pickling liquid. Wipe rims. Center lids on jars; screw on bands until fingertip tight. Place in the fridge for up to a week.View original recipe
