Instructions
**For the Salmon:** Divide the 1 lb salmon filet into two equal pieces. Add the salmon to a Pyrex baking dish, sprinkle kosher salt and pepper over the filets. Pour over the 1/2 cup Whole Foods honey Soy Ginger Marinade and bake in the oven at 375°F for about 18 minutes, depending on the thickness of your filet. **For the Farro:** Cook 1 1/2 cups of farro according to package directions, then drain. In a large bowl, whisk together the 1/4 tbsp sesame oil, 2 1/2 tbsp soy sauce, 1 tbsp Mirin, 1/2 tbsp white miso paste, 2 tsp fish sauce, 1 tsp honey, 1 minced garlic clove, 1/4 tsp Chinese five Spice, and salt and pepper to taste. Once the farro is cooked and drained, add it to this bowl and toss until well coated. **To Serve:** Divide the farro between individual serving bowls. Top each with a piece of salmon. Add optional garnishes such as slices of cucumber (avocado also works well), micro greens (baby spinach or chopped Swiss chard can also be a great addition, as can broccoli). If desired, sprinkle with dried seaweed or furikake seasoning. A spicy gochujang mayo can also be a delicious topping.View original recipe
