Easy Bruschetta (Dreaming of Summer)

Dreaming of warmer days? This easy bruschetta recipe uses cherry tomatoes, which are always a good choice this time of year, along with fresh basil, garlic, and balsamic vinegar on toasted baguette slices. Perfect for an appetizer or a light snack.

What you need

bunch fresh basil

french baguette

tsp black pepper

tbsp balsamic vinegar

clove garlic clove
pt cherry tomato

tsp kosher salt

cup parmesan cheese
Instructions
1. Wash your cherry tomatoes. Halve them and quarter them if you can. Transfer them into a bowl. 2. Add the 1/3 cup olive oil, balsamic vinegar, 2 tablespoons minced garlic cloves, salt, and pepper to the bowl with tomatoes. Mix together gently. 3. Cover the bowl and place it in the refrigerator for at least an hour to marinate. 4. In the meantime, prepare the toasts. Slice the french baguette on a diagonal, making the slices about a half-inch thick. 5. Rub each bread slice with the whole garlic clove. 6. Brush each slice with the 1/4 cup olive oil. 7. Place the bread slices on a baking sheet and toast them in the oven at 450 degrees Fahrenheit for about 6-7 minutes, until they start to get golden brown. 8. When the toasts are done, arrange them on a platter. 9. Remove the tomato mixture from the fridge. Add the chopped fresh basil to the tomatoes and mix. 10. Spoon the tomato mixture onto each piece of toasted bread. 11. Garnish by sprinkling more chopped basil over the platter.
