One-Pan Caramelized Onions, Butternut Squash, & Sweet Italian Sausage with Marsala

This cozy and easy one-pan meal features caramelized onions, roasted butternut squash, and savory sweet Italian sausage, all brought together with a rich Marsala wine sauce. While the onions slowly caramelize, you can attend to other tasks, making it a perfect weeknight dinner.

What you need

tbsp unsalted butter

tsp pepper

lb sweet italian sausage

yellow onion

tsp table sugar

cup marsala wine

tsp kosher salt
Instructions
In a large saute pan with high sides, melt 1 tablespoon of butter over medium/low heat. Add the sliced onions, creating one even layer in the pan. After 5 minutes, sprinkle sugar over top and stir gently. Then, let the onions saute another 7 minutes, moving them around the pan periodically to prevent burning. Add another tablespoon of butter to the pan and add in the butternut squash, gently stirring the onions and squash. Sprinkle salt and pepper over the top, stir once more. Let the onions and squash saute another 3 minutes, then push them to the side of the pan and add in your sausage. Brown the sausage on all sides by flipping periodically while sautéing for 8 minutes more. After the sausage is browned on all sides, add the marsala wine, and scrape the brown bits up from the bottom of the pan. Cover and let simmer for 5 minutes more, until the sauce is thickened.
