This Herby Orzo Dish is the side dish you need to bring to your next gathering, or what you need in your fridge all weekend long. Don’t be afraid of the anchovy paste in this recipe; it does not give the orzo a “fishy” taste. It melts into the dressing and gives it that delicious 'something' you can’t quite put your finger on. You could also omit the anchovy paste, but it does change the taste. Consider subbing in a little bit of soy sauce or experimenting with miso paste in its absence.
lb orzo
lemon zest
cup fresh dill

tsp pepper

cup fresh basil
cup fresh parsley
tbsp shallot

tbsp dijon mustard

tsp kosher salt

cup goat cheese

tsp anchovy paste

cup fresh squeezed lemon juice
Cook orzo according to package directions, drain, and reserve. In a large bowl, add all of the fresh herbs, lemon zest, shallots, dijon mustard, and anchovy paste. Whisk together as you add in the olive oil until well combined and all the olive oil is added. Squeeze in the lemon juice, season with salt, and pepper, whisking once more until well incorporated.
