1. Take your store-bought crumb cake and carefully flip it crumb-side down. 2. Using a serrated knife, slice off the top half of the cake. 3. Gently slide the bottom half of the cake onto your serving dish, using a spatula for assistance as it's a delicate process. 4. To make the cannoli cream: In a bowl, whip together 2 cups of whole milk ricotta, 1/2 cup mascarpone cheese, 2 tsp vanilla extract, and 1/4 tsp cinnamon on low speed until combined. 5. Once combined, add about 1 cup of powdered sugar and mix until well combined and the mixture thickens. 6. Fold in chocolate chips and optionally, some candied cherries for a festive touch. 7. Spread a layer of the prepared cannoli cream on top of the bottom cake layer. 8. Carefully slide the crumb top layer back onto the cannoli cream, again using a spatula.
