Instructions
Prepare your peppers and eggplant slices. In a bowl, mix olive oil, chopped garlic, basil, salt, and pepper to create a brushable dressing. Brush this mixture generously over the peppers and eggplant slices. Preheat your grill to 450°F. Place the brushed vegetables on the hot grill. Grill the peppers for approximately 6 minutes per side. Grill the eggplant slices for about 8 minutes per side, until tender and charred. Once grilled, arrange the vegetables on a platter or in a bowl. Pour any remaining dressing over the top of the grilled vegetables. Finish by breaking up some fresh burrata cheese and scattering it over the dish. Serve immediately.View original recipe
