Preheat the oven to 400 degrees Fahrenheit and prepare a rimmed baking sheet with parchment paper. Pat the fish filets dry, then sprinkle them with kosher salt and pepper. In a medium-sized bowl, mix the Parmesan cheese, bread crumbs, lemon zest, basil, and microplaned garlic. Add 1 tablespoon of olive oil to the breadcrumb mixture and mix to incorporate until it has the consistency of wet sand. Drizzle olive oil over the fish filets. Dredge the filets on both sides or simply sprinkle the breadcrumbs over the top of the fish and press down gently on both sides. Bake for 15 minutes, or until the fish is cooked through and the topping is golden. Let stand for 5 minutes before serving. Squeeze some lemon juice over the top if desired.View original recipe
