1. Preheat oven to 425°F. 2. Cut fingerling potatoes lengthwise and place them cut-side down on a dark baking sheet along with some garlic cloves. 3. Drizzle generously with olive oil and sprinkle with salt. 4. Roast in the preheated oven for about 35 minutes, or until tender and golden. 5. While potatoes are roasting, prepare the dressing: whisk together about 1/4 cup olive oil, the juice of half a lemon, and 1 tablespoon of finely chopped ramps in a bowl. Once the roasted garlic is cool enough to handle, peel it and add it to the dressing. Use your whisk to break up the roasted garlic pieces, incorporating them into the dressing. 6.
