Crockpot Pineapple Pork Loin

Recipe #5 and the last in this crockpot series. This pork loin is slow cooked with pineapple, brown sugar, soy, and a splash of lime! I served it over some whipped sweet potatoes and added some extra chopped pineapple at the end for a truly delicious meal! I did try this recipe with and without searing the pork. I know it’s an extra step but I did feel the results were worth it.

What you need

tbsp kosher salt
tbsp shallot

cup pineapple

clove garlic clove

cup soy sauce

lb boneless pork loin
tbsp olive oil
tbsp chipotle chili pepper
fl oz lime juice

tbsp cornstarch

tbsp water

cup brown sugar

tbsp fresh chives
Instructions
Heat the olive oil in a large skillet. Pat the pork loin dry and season with salt and pepper. Add it to the hot pan and sear the pork on all sides, about 5 minutes in total. In the bowl of the crockpot, add the crushed pineapple, soy sauce, chipotle hot sauce, lime juice, brown sugar, chopped garlic cloves, chopped shallot, and chopped chives. Whisk together to combine. Then add the seared pork to the crockpot, making sure it’s coated with the mixture. Cover and cook on low for 5 hours. At the 4-hour mark, mix together 1 tablespoon of cornstarch and about 3 tablespoons of water in a small bowl. Add this slurry to the crockpot to thicken the sauce, and cover once more. Make sure the internal temperature of the pork measures 145 degrees.View original recipe
