Springtime Mac and Cheese with Crispy Lemon-Garlic Broccoli

Mac and Cheese gets a springtime glow up! Add a little lemon zest to the mix and some crispy broccoli for a crunch without a breadcrumb topping.

What you need

lb broccoli

lb elbow pasta

clove garlic clove

tsp garlic powder

tbsp olive oil

cup pasta water

cup gruyere

tsp lemon zest

tsp kosher salt

tsp pepper

tsp black pepper

tbsp flour

tbsp unsalted butter

cup whole milk
Instructions
1. Preheat oven to 425 degrees. 2. Place broccoli on a large sheet pan with high sides. Season with salt, pepper, and garlic powder. Drizzle olive oil over top and place in the oven for 15 minutes until brown and crispy. Remove from oven and reserve. 3. In medium sauce pan heat 5 cups of milk until warm but not boiling. 4. Melt the butter in large dutch oven or pasta pot over medium heat, add the minced garlic and saute for 1 minute, then add in flour stir to combine, cook for another 2 minutes until the mixture turns a golden color. 5. Add the warm milk to the flour mixture, whisking constantly. Then zest in the lemon. Add in a pinch of kosher salt and pepper. Mix well, let the mixture gently heat through and simmer until the sauce thickens, whisking continuously for about 5 minutes. 6. Turn off heat and add in all cheeses, stirring gently after each addition to melt through. 7. Add in cooked pasta and toss until well coated. Place in a 9x13 baking pan and add broccoli over top.
