Za’atar Spiced Grilled Chicken with Cucumber Yogurt Sauce

For the Za’atar Spiced Grilled Chicken: Drop the 1/2 cup olive oil, juiced large lemon, 3/4 cup fresh parsley, large garlic clove, 1 tbsp Za’atar seasoning, 1/2 tsp kosher salt, and 1/4 tsp pepper into a blender, and blend until smooth. Take two tablespoons of this mixture and set aside for the yogurt sauce. Place the 1lb thin sliced chicken breast in a ziploc bag or large bowl. Pour the remaining blender contents over top, mix until chicken is well coated and set aside to marinate.

For the Cucumber Yogurt Sauce: In a medium size bowl, mix together the 1 cup greek yogurt, 1 zested mini cucumber, 1 zested lemon, the 2 tbsp of reserved Z’atar & Parsley sauce, 1 tsp red pepper flake, 1 tsp kosher salt, 1 tsp pepper, and a splash of red wine vinegar until well combined.

To Grill the Chicken: Heat a grill pan over medium heat and drizzle with olive oil. Place the marinated chicken on the pan and grill about 5-6 minutes per side, until grill marks appear, and the internal temperature reaches 165 degrees. Remove chicken from the pan and let it rest for 3-4 minutes. Slice the chicken and add to your favorite greens, with a dollop of the cucumber yogurt sauce. You can add feta cheese or quick pickled onions if desired.
