Crunchy Diner-Style Cabbage Salad

Everyone is looking for crunchy salad ideas right now. This one is super simple but satisfying. The inspiration came from one of my favorite NJ diners. Earlier this year I did a couple of NJ diner inspired recipes ! I keep in a big container and munch on it all week long! I throw chickpeas some weeks ! The best part is, the longer it sits the better it gets. It is also the perfect side to a grilled cheese or burger.

What you need

cup cabbage

green bell pepper

cup white vinegar

tbsp granulated sugar

tsp celery salt

carrot

tbsp cooking oil
Instructions
For the salad, combine shredded cabbage, chopped green bell pepper, and sliced carrots. For the dressing, whisk together white vinegar, neutral oil of choice, granulated sugar, celery salt, and pepper to taste. Pour the dressing over the salad until well coated. Place the salad in an airtight container and refrigerate for at least 2 hours before serving. The salad tastes even better the longer it sits.View original recipe
