Elevated Boxed Couscous with Fresh Herbs and Lemon
If you have boxed cous cous throw out the spice packet and opt for some items you may have around to elevate it! I had some wilting dill in the fridge, parsley, and some basil from garden, chopped that up real good, I had 3/4 of a cup of chopped herbs. Then I squeezed a whole lemon into the bowl with the herbs, I zested in about a teaspoon of shallot, 3 tbsp of grated Parmesan Reggiano cheese, salt and pepper, 1/2 cup of olive oil, whisk it up real good, add the cooked cous cous into the bowl and toss it together gently. This little #halfwayhomemade hack makes an ordinary into something delicious by pulling things from your pantry. I love that grains are often a blank slate to get creative with add ins.
What you need

tsp salt

cup cooked couscous

lemon

cup olive oil

tbsp parmigiano reggiano cheese
cup fresh dill
tsp shallot
Instructions
Chop the fresh dill, parsley, and basil until you have about 3/4 of a cup of chopped herbs. Squeeze a whole lemon into a bowl with the chopped herbs. Zest in about a teaspoon of shallot. Add 3 tablespoons of grated Parmesan Reggiano cheese, salt, and pepper to taste. Pour in 1/2 cup of olive oil. Whisk all the ingredients in the bowl together thoroughly.
