🍴This salad looks like a magazine dream but comes together super quick if you know the right shortcuts to take. Slice up some peaches, and chop up some escarole lettuce. Then take a good old store bought rotisserie chicken and slice some pieces off the breast. Layer the pieces of chicken into the salad along with some avocado. Then see if you can find spiralized sweet potatoes in your grocery store. I found some at Whole Foods and found them intriguing. I sauteed them quickly with a little bit of chopped garlic, olive oil, and maple syrup for like 4 minutes. Then placed them on top of the salad platter. Drizzled a little bit of a maple vinaigrette over top and we had a tremendous dinner salad. Perfect for when you do not want to turn on the heat in the kitchen! For the vinaigrette: Whisk together 1/4 cup of olive oil, 2 tbsp maple syrup, 1 tablespoon apple cider vinegar,1/2 tsp smoked paprika, kosher salt, and pepper to taste.
