Roasted Broccoli with a Caesar Inspired Dressing

In an effort to change up the side dish rotation, this little mash up became a weekly staple. Roasted Broccoli with a Caesar inspired dressing. We like our broccoli super toasty, almost a bit burned if you will. It gets crispy and crunchy, a little salt and honey for Siena. She loves it! Yes, my kid eats broccoli this way! My quick version of Caesar dressing below.

What you need

lemon zest

fl oz honey
broccoli

tbsp kosher salt

tbsp olive oil

pepper
cup mayo

tsp dijon mustard

lemon

tsp anchovy paste

tbsp parmesan cheese
Instructions
Preheat oven to 425°F. Cut broccoli into florets and slice them as best you can. Lay the broccoli on a baking sheet, drizzle with olive oil, kosher salt, and pepper. Roast in the oven at 425°F for about 15 minutes, or until your desired level of 'done' (super toasty, almost burned for crispy and crunchy texture). For the dressing, combine 1/4 cup mayo, 2 tsp Dijon mustard, 1 tsp anchovy paste, 2 tbsp olive oil, the juice from half a lemon, and 4 tbsp Parmesan cheese in a bowl. Season with salt and pepper to taste and whisk together until combined. Pour the dressing over the roasted broccoli. Top with lemon zest and more Parmesan cheese if desired. For a kid-friendly version, add a little salt and honey to the roasted broccoli.View original recipe
