Spicy Tahini Brussels Sprout & Cabbage Salad with Chicken

Right now I have been craving a lot of big crunchy salads. This salad is exactly THAT. Shaved brussels with purple cabbage, tossed with a slightly spicy tahini dressing is satisfying on so many levels! I added in a little bit of chopped apple for some sweetness and I warmed up some rotisserie chicken before throwing it in. This salad gets better as it sits, so it’s perfect for meal prep!

What you need

cup purple cabbage

slice cooked chicken breast
tbsp apple cider vinegar

tbsp honey

tsp chili oil

pinch pepper

cup brussel sprouts
cup tahini

tsp olive oil

red apple

tbsp shallot
Instructions
1. In a small bowl, whisk together the tahini, apple cider vinegar, chili oil, honey, salt, and pepper for the dressing. 2. Combine shredded brussels sprouts, shredded purple cabbage, and chopped apple in a large bowl. Sprinkle kosher salt and pepper over top. 3. Add half of the dressing to the salad ingredients and toss to incorporate. 4. While the salad sits, heat a medium size pan over a low flame. Add 1-2 teaspoons of olive oil. 5. Sauté the sliced shallots until soft, about 3 minutes. 6. Add the rotisserie or pre-cooked chicken to the pan and warm through. 7. Add the warmed chicken and shallots over top of the salad bowl. 8. Add the remaining dressing, toss gently, and serve.View original recipe
