Twice Baked Potatoes

Twice Baked Potatoes are something I have been making since Brian and I first got married. They are one of his favorite side dishes, I mean who doesn’t love a loaded potato?

What you need

cup whipped cream

tsp garlic powder

tsp paprika

tsp kosher salt

tsp black peppercorn
tbsp olive oil

cup cheddar cheese

tbsp chive
Instructions
Microwave the potatoes until they are easily pierced by a fork. Allow the potatoes to cool to touch. Slice the top third lengthwise off the potato. Use a spoon to gently scoop out the insides, leaving about 1/4 inch of potato on the skin. Almost like a larger potato skin. Place the scooped out potato insides, sour cream, heavy cream, garlic powder, paprik, salt and pepper into a large bowl.Mash with a potato masher until you have your desired consistency. Try not to overwork them because they will turn the consistency of glue! Place the potatoes in a ceramic baking dish, rub the skins with olive oil. Stuff the potato shells with the filling. Top with the shredded cheese. Bake in the oven at 375 for about 15-20 minutes, until the cheese is melted. Top with fresh chives and serve.View original recipe
